Coconut Ice Cream

NEW! This old-fashioned Trinidadian recipe is simple to make with canned coconut milk and custard powder (no eggs!).

Greek Salad

One of my favourite ways to enjoy fresh summer tomatoes and cucumbers is in a Greek salad. (Or maybe I just want a reason to eat Feta cheese and olives...)

Tuna Carpaccio

I re-created this dish from the popular SkipJack's restaurant in St. Maarten. It's a beautiful way to enjoy raw tuna.
